This is a refreshing citrus vinaigrette with just a hint of sweetness.
- 2 tablespoons Orange Juice, fresh squeezed
- 1 tablespoon Lemon Juice
- 1 tablespoon White Wine Vinegar
- 1 teaspoon Dijon Mustard
- 1 tablespoon Honey
- 1 small Shallot minced
- 3/4 Cup Olive Oil
- 4 or 5 Mint leaves (finely chopped)
- Salt
- Pepper
Combine all ingredients and mix until oil and acids are incorporated. A blender works really well if you don’t want to chop up the mint leaves. Like all dressings, taste while you’re mixing ingredients so you get the proportions customized to your palate!
